Spicy Prosciutto Focaccia

Focaccia
  • 4 c all purpose flour
  • 2 tsp kosher salt 
  • 2 tsp instant yeast 
  • 2 c lukewarm water (98-105 degrees fahrenheit) 
  • EVOO
Toppings
  • Crushed red pepper
  • Favorite pizza sauce (highly recommend Don Pepino pizza sauce)
  • Prosciutto
  • Arugula 
  • Flaky Salt 
  • Parmesan, grated 

Instructions
  1. Whisk together flour, salt, and instant yeast.
  2. Add water and knead with your hands or in a stand mixer until a dough ball is formed.
  3. Rest for 30 mins on counter. 
  4. Cover dough ball with olive oil and place in clean bowl covered in plastic wrap or a tea towel. 
  5. Place in the refrigerator overnight. 
  6. Lather two 9x9 inch pans with a generous amount of olive oil. 
  7. Divide dough ball into the two baking pans.
  8. Cover and let rise on countertop for 3-4 hours until dough rises.
  9. Top with pizza sauce of choice (I prefer a less saucy focaccia so I use minimal sauce) 
  10. Bake at 425 degree fahrenheit for 25 minutes.     
  11. Remove from oven and immediately grate parmesan over pizza sauce, top with arugula, prosciutto, flaky salt, crushed red pepper, and olive oil.
